What is Tea?
Tea comes from two closely related plants; Camilia Sinensis (China) and Camilia Assamica (India). White, Green, Oolong, Black and Pu-erh are all from the tea bush, but what happens after leaves are harvested determines the tea type. White and Green teas are the least processed and are either sun dried or pan fried after picking which stops the oxidation process. Oolong is picked then partially oxidized; while Black tea is fully oxidized. Pu-erh is aged black tea. Traditionally aged in caves, it is known for its earthy finish. Green tea has a vegetal or grassy flavor; Oolong is more buttery and nutty; and Black tea is characterized as malty.
