Champagne Fizz White Tea
A wine inspired blend that combines the unique characteristic of white tea and champagne to satisfy both wine and tea lovers. Very smooth and subtle with berry undertones.
Ingredients: white tea, safflowers, berry and champagne flavors
Steeping Suggestion: Use 1.5 tsp/ 8oz cup. Steep 3-5 minutes in 180 °F water.

Wine and tea have a lot in common. Similar to wine, tea brings many sensory perceptions. Fresh tea offers complex fragrances that are typically fruity and floral, which vary depending on the variety of tea leaves and the way they are harvested and processed. Tea, like wine, may range from light to full-bodied. Both drinks can be paired with food and the variety within each drink works best at different times. Tea and wine express distinctive flavors that reflect where the tea leaves and the grapes are grown. For example, altitude, weather, soil or even harvest time can all affect how both tea and wine taste. A quick and easy way to make iced tea that you can enjoy immediately is to flash chill. This method starts with a hot, concentrated brew that’s rapidly cooled over ice to lock in the tea’s brightness, sweetness, and aroma. To prepare flash-chilled iced tea, use double the amount of tea as suggested above. Steep normally with hot water for 3-7 minutes depending on the type of tea. Strain the leaves and add sweetener of your choice while the tea is still hot. Then pour directly over ice for a refreshing iced tea.
Alternatively, you can try a cold brew method. Cold brewing is a slow and gentle way to bring out the natural sweetness and smooth character of tea. Steeping in cold water extracts fewer tannins, resulting in a clean and mellow flavor. To prepare, follow the suggested tea ratio above. Use cold or room-temperature water, and refrigerate at the minimum of 4 hours. Lighter teas like green or white can be ready in 4–6 hours, while darker teas or herbal blends may benefit from 8-12 hours.
Many whole leaf teas made from the Camellia Sinensis plant such as white, green, oolong, and black teas can be enjoyed through multiple infusions. Each steeping reveals new layers of aroma and flavor as the leaves gently unfurl. To enjoy a second or third infusion, simply increase the steeping time slightly with each round.
Herbal and fruit blends, however, tend to release most of their flavor and beneficial compounds during the first steeping, so resteeping may result in a much lighter and unbalanced cup.
